Ingredients

    2 teaspoons EVOO
    1 small garlic clove, minced
    2 large russet potatoes
    ¼ teaspoon kosher salt
    Cooking spray
    2 teaspoons chopped fresh parsley

Directions

1. Preheat oven to 425°F.
2. Combine oil and garlic in a large bowl. Scrub potatoes; pat dry. Cut each potato lengthwise into 6 wedges, and add to oil mixture. Toss wedges until thoroughly coated. Sprinkle wedges with salt; toss well. Place wedges on a large baking sheet coated with cooking spray.
3. Bake at 425°F for 50 minutes or until wedges are tender and golden. Remove from pan; sprinkle with parsley.

Serving Size: Serves 2 (6 wedges each)
