Introduction

A basic vegan flapjack style granola bar, with a base of unflavoured soy protein for a filling snack. A basic vegan flapjack style granola bar, with a base of unflavoured soy protein for a filling snack.

Ingredients

    2 medium bananas, mashed
    ½ cup peanut butter
    2-3 tbsp golden syrup (or syrup of choice)
    1.5-2 cups oats
    ½ cup - 1 cup add ins, such as dried fruit and nuts.
    1 cup unflavoured soy protein
    * Cinnamon

    *Optional: additional sweetener to taste

Directions

Preheat oven to around 200C

1. Mash up the bananas
2. Add the syrup and peanut butter to the mashed banana (don't mix it yet!)
3. Microwave or heat that stuff up for like ten seconds, until it is all warm and malleable, and easy to stir around.
4. Give it a good mix, and add in the Oats, protein powder, cinnamon, and any add ins you like.
5. Stir it all together!
6. Adjust the consistency to your liking - If it is too dry, add a drop or two of water (because protein powder needs liquid!), and more oats if too wet. It should be quite a wet consistency, and will probably stick on everything.
7) Pile it into a biggish tin (i used three quarters of my 9x13 tin) and press down, however thin you want them to be. Mine were perfect thickness: about ¾ inch - ½ inch in places. Use any size tin you like.
8) pop it in the oven for about 20 minutes, until it starts going brown on top or catching at the edges.
9) Leave them to cool down before cutting, and then keep in an airtight container to keep you going through the day!
