Introduction

Ingredients

1 cup (2-3 ripe) mashed bananas
2 cups old fashioned rolled oats
1/2 cup peanut butter
2 scoops (2/3 c) of vanilla protein powder (I like Muscletech Whey Protein Plus)
2 Tbsp chia seeds
1/2 cup craisins
1/2 cup unsweetened coconut
1/2 cup raw almonds, roughly chopped
1/4 cup Good Earth tea (or water)
1 1/2 tsp cinnamon
1 1/2 tsp vanilla extract
Tips
This is also delicious if you substitute pumpkin for the bananas and add nutmeg, ginger and allspice. It's also amazing if you leave out the craisins and instead add 1/2 cup mini chocolate chips.
Directions
1) Preheat oven to 350 degrees
2) Combine all ingredients in a mixing bowl and mix to combine
3) Spread batter into a greased 8x8 or 9x9 pan
4) Sprinkle top with additional coconut, if desired
5) Bake for 25-30 minutes. Bars may look underdone but will continue to set up as they cool.
6) Store extras in the freezer for easy access to a healthy snack.
