    Ingredients:
    Chicken Breast no skin, 12 ounces
    Mc Cormick Parmesean Chicken Seasoning, 2 tsp
    Coconut Oil, 1 tbsp
    Red Onion Raw - thinly sliced 0.5 cup
    Peas, frozen, 1 cup cooked and cooled
    Carrots, raw, 1 cup, grated
    Yellow Bell Pepper, 1/2 pepper chopped
    Asparagus, fresh, 10 spear, small
    Coconut Oil, 1 1tsp
    *Cheese - Parmasean Grated 2Tablespoon
    Vinegar - Natural Rice Vinegar, 4 tbsp
    Water, tap, .5 cup (8 fl oz)
    *Extra Virgin Olive Oil, 1 tbsp
    Fresh Basil, 4 tbsp
    Mrs. Dash (R) Lemon Pepper Seasoning Blend, 4 tsp
    Great Value Penne Pasta - Whole Wheat, 2 cups - cooked & chilled
    Spinach, fresh, 8 cup

Directions

Cut chicken in to bite sized pieces and cook in 1tbsp of coconut oil and 2 tsp chicken seasoning. At the same time, microwave 1tsp of coconut oil and toss with asparagus. Roast the asparagus at 400 degrees until tender (about 10 minutes) then cut in to bite sized pieces and chill both the chicken and the asparagus.

In a large bowl whisk together the vinegar, olive oil, water, basil, Mrs Dash and grated cheese. Once combined, toss with chicken, asparagus, red onion, peas, carrots, pepper, and pasta.

Serve 1/4 of the pasta mixture over 2 cups of spinach.
