Ingredients

    2 TBSP extra virgin olive oil
    1 cup chopped onion
    2 cloves garlic, chopped
    1 19oz can fava beans, drained & rinsed
    1/2 bunch kale, chopped
    1/4 tsp black pepper
    1/4 tsp ground sage
    1/4 tsp ground cumin
    1/4 cup water

Tips

Tastes great alongside baked yams.
The addition of mushrooms would probably be tasty.


Directions

Saute onion in EVOO over medium heat. Mix in garlic, beans, kale, pepper, sage, cumin and water. Cover and simmer for about 30 minutes, or until you like the consistency of the kale.
