Introduction

An adapted recipe from a delicious Allrecipes.com favorite. Added one sliced leek to the pan after the bacon was cooked and the grease drained off, and added more broth to make six servings. Ingredients

    8 slices bacon
    1 leek, thinly sliced (white part only)
    2 cups finely sliced cabbage. Can add more to taste without affecting the calories.
    3 cups low sodium chicken broth
    1 can diced tomatoes (I use the ones with oregano, basil and onion)
    3 large potatoes, diced to 1/2 inch cubes.

Tips

Leeks add a nice mild flavor to this soup, but regular onion would be just fine.


Directions

Dice the bacon and brown in a soup pot. Remove when browned and drain on a paper towel. Discard the bacon grease, but don't wipe out the pot. In the same pot, add the sliced leek and sauté, then add the cabbage and return the bacon to the pot. Add the diced tomatoes, potatoes, broth. Bring to a boil, then reduce to a simmer. Cover and cook about 45 minutes till potatoes are done and cabbage is tender.
