Introduction

Ingredients

Get either two very large yellow bell peppers 8oz each or 4 small ones- 4 oz each.
I link hot Italian Jenny O turkey sausage
4 oz beef
8 oz sliced mushrooms,
1 cup diced onions
8 Tbls olives
14 oz jar thick pizza sauce like Classico
1/4 cup shredded mozzarella.
Tips
** look for peppers that have flat sides or bottoms..when you cut them they need to stand up to hold the filling.
* cooking the sauce mix a bit longer intensifies the rich tomato taste!
Directions
Get either two very large yellow bell peppers 8oz each or 4 small ones- 4 oz each. Cut out stem and seeds and slice in half if using the large peppers to form 2 bowls. Or slice off the tops of the smaller peppers to form smaller bowls. Place is casserole dish with 1/4 cup water and microwave until just crisp tender (for about 5 minutes)
Meanwhile in a large non stick pan break up sausage and beef into crumble size pieces- add mushrooms, onions and olives. Cook until dry and meat os well browned. Add 14 oz jar thick pizza sauce like Classico and stir until heated through.
Divide the sauce mix equally into the peppers. Top with 1/4 cup shredded mozzarella.
Place in a 350 oven and bake until cheese is melted and starting to brown
Makes 4 servings and goes great with a simple green salad.
