Ingredients

    4 Low Fat Sausages (Beef/Pork/Vegetarian)
    1 Tin Chopped tomatoes
    1 Tin Mixed Beans (Kidney/
    1/2 Onion (White or Red) sliced
    1/2 Fresh Red or Green pepper sliced
    1 clove of garlic crushed
    2 tbs fresh basil - torn
    1 tsp cayenne peper or paprika (optional)
    1 tbsp Olive Oil
    1 tbsp chopped Chilli (optional)
    Salt & Pepper - to taste

Tips

You can add a small amount of chopped chorizo if you wish when adding the cooked sausages.
Extra tins of beans will bulk out the recipe if you need to serve more people without doubling all the ingredients.
It is really nice with fresh crusty bread or garlic bread as a treat.


Directions

1. Grill the Sausages until cooked - cut into large chunks and leave to one side.
2. Heat oil in a large pan (with a lid) and soften the garlic, onion and pepper until starting to colour.
3. Add tomatoes, tin full of water, mixed beans and chilli & cayenne or paprika (if using) - bring to the boil.
4. Reduce the heat to a simmer and add half the basil and sausages - simmer for approximately 15 minutes.
5. Check seasoning and add remaining basil, allow to wilt.
6. Check seasoning and serve.
