Ingredients

    Beans, black, 3 cups
    Red rice, 1cup
    1 med yellow onion, chopped
    Red Bell Pepper, large, chopped
    Garlic, 2 cloves, minced
    365 Organic Diced Tomatoes, 3.5 cup or 28 oz can
    Chili powder, 1 tbsp
    Cayenne pepper, 1/2-1 tsp (optional)
    Ground Cumin seed, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Yellow Sweet Corn, Canned, .75 cup

Tips

You can adjust the spices to taste. More Cayenne makes a higher alarm chili. Also adding different types of peppers (canned hatch peppers, poblanos, etc) will adjust the heat level.


Directions

Combine all ingredients except corn over medium high heat until simmering. Reduce heat & simmer for 1 hour. add corn during last 10 minutes.
