Introduction

These creamy portion-controlled cheesecake bites let you indulge without guilt! These creamy portion-controlled cheesecake bites let you indulge without guilt!

Ingredients

    12 low-fat vanilla wafers

    3 oz. cream cheese, at room temperature

    12 oz. fat-free cream cheese, at room temperature

    1/2 cup sugar

    1/2 teaspoon vanilla

    2 eggs

    24 fresh blueberries

    6 fresh strawberries, sliced into quarters

Tips

Omit the vanilla wafer crust to save about 30 calories per cheesecake bite.

For a patriotic celebration (like Memorial Day or Independence Day), use red, white and blue cupcake wrappers!


Directions

1. Preheat oven to 350° F. Line muffin tins with 12 foil cupcake papers. Place a vanilla wafer in the bottom of each cupcake paper.

2. In mixing bowl, beat cream cheese and fat-free cream cheese until smooth. Add sugar and vanilla and mix well. Add eggs and beat until smooth.

3. Pour cheesecake mixture into muffin tins. Bake for 20 minutes or until centers are almost set. Cool. Refrigerate 2 hours or overnight.

4. Decorate cheesecake tops with 2 slices of strawberries and 2 blueberries.

Makes 12 cheesecakes/servings.

    I used 16 oz of low fat cream cheese instead of mixing regular with fat free. Did not like vanilla wafers as the crust, so will choose a different cookie to find one that works for me. We made 2 sets with berries on top and one with chocolate chips mixed in. Very, very good! - 7/5/14

    I have made a similar recipe and really enjoy however have not been able to find the vanilla wafer cookies so just used graham wafer crumbs from another cheesecake recipe which worked well. Uncertain as to how this affects the caloires - 8/31/14
