Introduction

Number of Servings: 10

Ingredients

    3 lbs round steak, trimmed cubed
    2 T olive oil
    1T flour
    6 medium russet potatoes, peeled 1/2 inch cubed
    4 C fresh green beans (or frozen)
    7 oz can green chiles (or fresh if you have them)
    2 T chopped Roma tomatoes
    2 cloves garlic, minced
    10 oz canned tomatoes (with juice)
    8 oz canned red chile sauce* (Las Palmas)
    1/4 C water
    1 1/2 t ground cumin
    salt and pepper to taste

Tips

* You can use tomato sauce if your family does not like the heat.
Chile Colorado (red chile) sauce IS NOT enchilada sauce. It comes in different heat levels, too.


Directions

Microwave cubed potatoes for 5 minutes
Brown steak (in olive oil) in heavy skillet over medium high heat
Sprinkle on flour and stir well
Stir in the microwaved potatoes
Stir in the rest of the ingredients, except green beans
Bring to a boil, lower heat and simmer 30 minutes
Add green beans
Continue to simmer another 10 minutes until meat is tender and sauce is thick

Serving Size: 10 servings
