Ingredients

1 Cup Sweet Potato Puree
½ cup Almond Butter
1 Egg
T Tablespoon Honey
2 Teaspoons Vanilla Extract
35 Grams Garden of Life Protein Powder
⅛ Teaspoon Cinnamon
½ Cup Enjoy Life Chocolate Chips
Tips
Use a plain white sweet potato and not a yam, unless you don't mind if your cookies are orange.
Directions
Cookie Sweet Potato
Remove Peel and Puree
Use 1 cup for this recipe and freeze the remainder for another day.
Mix the Sweet Potato with the Almond Butter, Egg, Honey, Vanilla, Protein Powder, and Cinnamon.
Gently fold in the chocolate chips.
Spoon onto a baking sheet with a small melon baller.
Flatten each blob of cookie dough - it won't flatten out during baking.
Bale @ 400 for about 10 minutes - watch carefully because these things tend to burn on the bottom. I usually cook for 5 or 6 minutes and then flip them.
