Ingredients

2 cups cooked shredded chicken
20 oz frozen broccoli
16 oz penne
2 Tbsp olive oil
2 Tbsp flour
1 c chicken broth
1/4 c plain greek yogurt
1 c milk
3 cloves garlic
3/4 c parmesan cheese
salt to taste
Tips
I add extra milk if I need it to be creamier. I also blend the broccoli so it's easier for my kids to eat it. It is not a necessary step. I usually slow cook a whole chicken the day before so that I can pick the bones out and use the chicken for recipes. This way, I can save the 'juices' and make my own chicken stock and broth as well.
Directions
Cook broccoli and pasta. Drain. Blend broccoli into finely chopped pieces.
In a saucepan, combine oil and garlic over medium heat. Cook a few minutes and add flour. Add chicken broth while continuing to stir. Turn heat to low and add milk, yogurt, and cheese. Stir until smooth, salt to taste. Pour over chicken, pasta and broccoli.
Serving Size: Makes roughly 12 (1 cup) servings
