Ingredients

    1 cup frozen spinach
    1/2 orange bell pepper (or red/yellow)
    1/2 medium onion
    1 cup sliced mushrooms
    1 tsp olive oil
    2 oz thin sliced ham (I used Boar's Head from deli)
    4 whole eggs
    2 egg whites
    1/2 cup plain non fat yogurt
    1/4 cup half and half
    1/4 cup low fat milk
    1/2 tsp oregano
    salt and pepper to taste
    1/2 cup monterey jack cheese, shredded
    1/2 cup 2% sharp cheddar, shredded
    large roma tomato

Tips

you can substitue and vegetables you like and probably adjust the cheese, whole egg count (3/3 instead of 4/2) and 1/2 and 1/2 to lower fat content.


Directions

saute pepper, onions, mushrooms and partially thawed spinach in olive oil until soft. Mix eggs, egg whites, yogurt, half and half, low fat milk, oregano, salt and pepper. lay ham in shallow round baking dish. put sauteed vegetables on top and cover with Monterey Jack cheese. Pour egg mixture into dish. Add cheddar cheese and top with thinly sliced Roma tomato. Bake at 350degrees for about 45 minutes, or until brown around edges.
