Introduction

Those delicious vegan treats make a great snack or dessert - or even breakfast! Those delicious vegan treats make a great snack or dessert - or even breakfast!

Ingredients

    SWEET POTATO-CREAM
    260-280g peeled sweet potato
    8 soft pitted dates
    1 tsp cinnamon
    1/4 tsp ground nutmeg
    2.5 tbsp coconut oil
    1 pinch of salt

    CRUST
    10 soft pitted dates
    100g almonds
    1 big tbsp unsweetened cocoa powder

Directions

Cut the sweet potato into cubes and bake till soft at 200C for about 25-30min.
In the meantime prepare the crust by processing all the ingredients in a food processor until you get a sticky mixture. Press into a baking dish that is lined with wax paper.
Once the sweet potato is done let it cool down a little. Then process the sweet potato with the rest of the ingredients in a high speed blender until creamy. Spread the mixture on the crust and put it in the fridge for a couple of hours.

Serving Size: makes 10 to 12 small pieces
