Ingredients

    TRADER JOES 0% GREEK YOGURT, 3/4 c.
    Banana, fresh, 2 large
    1 TBSP Ground Flaxseed Meal
    Wheat flour, white, all-purpose, unenriched, 1/2 c
    Baking Soda, 1 tsp
    Baking Powder, 1 tsp
    Dark Chocolate Chips 1 cup (adjust for your taste in sweetness)
    Water 3 TBSP

Tips

Be sure to mix dry ingredients separate from wet ingredients.

I brush my griddle very lightly with coconut oil to prevent sticking.

Freeze for later.


Directions

In a mixing cup, mix flax meal with water and let sit. In a medium bowl, mash the bananas. Then, mix in Greek yogurt. In a small bowl, mix together flour, baking soda, and baking powder. Mix in flax meal mixture to large bowl. Pour small bowl into large bowl and stir well. Stir in chocolate chips. Scoop 1 Tbsp batter onto griddle. When edges begin to make a ring around the pancake, flip over. Cook another few minutes and scoop onto plate. No topping needed.

Serving Size: Makes 24 pancakes-1TBSP of batter per pancake
