Do not omit the honey unless you must. The honey serves the purpose of keeping the bread soft for several days (honey attracts moisture from the air).
This will not make an 'oversized' big bread-machine loaf. It will make a more normal sized loaf suitable for sandwiches. When cool, this bread can be cut thin and will hold together.
