6 Eggs
6 Egg Whites
1/4 Cup Shredded Skim Mozzarella Cheese
1 Small Onion, Chopped
4 Oz Lean Ham, Cot Into Matchsticks
1 Cup Baked Sweet Potato, Sliced
1/2 Pound Asparagus, Trimmed And Cut Into 2" Pieces
1 Cup Cherry Tomatoes
1/2 Teaspoon Dried Oregano (1 Tablespoon Fresh)
1/2 Teaspoon Sea salt
Tips
Serve with a side of fresh citrus salad.
Directions
Heat oven to 400 Degrees. Mix Eggs, Whites. Cheese and Oregano. Set Aside.
Heat 1 tablespoon Oil in a 10 inch sauté pan or cast iron skillet on medium high. Cook onion until golden, about 7 minutes.
Add Ham, Potato, Asparagus and Tomatoes. Cook about 4 minutes or until Asparagus softens.
Add egg mixture to pan and tilt pan to evenly distribute eggs. Cook eggs until they just begin to set (3 to 4 minutes).
Place pan in oven and cook for an additional 10 to 12 minutes.\, or until eggs are firm and top is lightly browned.
Remove from oven and let rest for 5 minutes. Cut into 6 equal wedges.
