Ingredients

    24 oz salmon fillet or 4 6 oz salmon fillets (I use Wild caught Sockeye or some other Alaskan variety)
    sea salt and coarse ground black pepper to taste, not in nutritional values
    Glaze:
    4 tsp. Dijon-style mustard
    2 Tbsp. soy sauce
    4 Tbsp. Extra Virgin Olive Oil
    1 tsp. minced garlic in oil

Tips

You can double this recipe and serve the leftovers cold on a salad the next day...delicious!


Directions

Heat oven to 425°F. cover a large baking sheet with foil. Place fillets on foil, skin-sides down, 1 or 2 inches apart.

Whisk glaze ingredients together in a small bowl until blended. Drizzle half glaze over salmon and set aside 5 or 10 minutes. Season with salt and pepper.

Place salmon in oven and bake 10 to 15 minutes or until done (fillets are just beginning to flake when tested with a fork....DO NOT OVERCOOK). Remove from oven and let stand 5 minutes; salmon will continue to cook during this time. Drizzle remaining glaze over salmon and serve while hot.
