Ingredients

    3c Blueberries, washed & dried

    2 tbsp Butter @ room temp, plus extra for coating
    2/3c Sugar
    3 Eggs
    1/2 c Flour
    1 c Cream
    1tsp Cinnamon, 1/2 tsp vanilla and almond extract

Tips

Blueberries can be replaced with pitted and halved cherries, or sliced Pears/Peaches

Using frozen fruit is not recommended due to water content and texture.


Directions

Preheat oven and casserole or large iron skillet to 400F

Cream butter and sugar, add eggs & mix well on slow speed.
Add flour. Once incorporated, slowly add cream.
Add cinnamon and extracts.

Pour batter to 1/4" thickness into preheated and greased vessel, bake 5 min. Remove from oven, spread blueberries and pour remaining batter.

Bake for 30 minutes or until top is golden brown. Allow to cool slightly. Dust with powdered sugar and serve warm.

Serving Size: Makes 12 4" pieces
