Introduction

Ingredients

1 kilo (1000g) potatos, sliced
250g frozen spinach, thawed, drained & chopped
100g Feta Cheese (I used low fat), sliced
300ml light cooking cream
25g low fat cheese, grated (optional).
Directions
Preheat oven to 170 degrees Celsius.
Thaw spinach according to packet directions.
Slice feta cheese and potatoes thinly.
Layer half the potatoes into an oven proof dish.
Spread the spinach on top of the potatoes, followed by the sliced feta cheese (or crumbled, whichever you prefer).
Layer the remaining potatoes on top and pour light cream over the dish.
Sprinkle grated cheese over the top (optional) before placing in oven.
Cook for 60-70 minutes or until potatoes are soft.
Serves 4-6. 4 if using as a main meal, 6 if using as a side dish. Great as left overs.
