Ingredients

    1 (8 ounce) package Vigo® Authentic Red Beans and Rice
    4 ½ teaspoons coconut oil, divided
    1 ½ teaspoons Hot Seasoning Blend
    ¼ cup chopped celery
    ¼ cup chopped onion
    ¾ cup frozen sliced okra, thawed
    About 1 pound large shrimp, peeled and deveined

Directions

1. In a large saucepan with a tight lid, bring 3 ½ cups of water to a boil.
2. Add 1 ½ teaspoons of the coconut oil. Then add the Vigo® Authentic Red Beans and Rice, stirring while boiling for 1 minute. Cover and reduce heat to a simmer, cook for 20 to 25 minutes.
3. While the red beans and rice are cooking, place the Hot Seasoning Blend in a Ziploc bag; add the shrimp and shake to coat. Set aside.
4. About 10 minutes before the red beans and rice are fully cooked, heat 1 ½ teaspoons oil to a large non-stick skillet over medium high heat. Add the celery, onion, and okra stirring constantly for 5 minutes or so.
5. When the red beans and rice are finished cooking add the veggies and stir to combine and keep warm.
6. Add the remaining oil to the skillet, add the shrimp and cook until they are bright pink on the outside and the meat is no longer transparent in the center, about 4 minutes.
7. Serve the shrimp over the red beans and rice.
