Introduction

I wanted to make salsa chicken in the slow cooker, but I had to make do with what I had on hand. It turned out amazing!
(The quick barley I added as an afterthought about an hour in because there was SO much liquid and I thought it would thicken it up and add some whole grains)

Ingredients

    2 lbs chicken
    14.5 oz can of petite diced tomatoes with chilies, undrained
    1 large red bell pepper diced (about 220g)
    1 large green bell pepper diced (about 220g)
    .5 jalapeno diced fine
    .5 large onion, minced
    3 cloves garlic, minced
    1 cup salsa
    1 envelope reduced sodium taco seasoning
    1 T thyme (I used dehydrated)
    .5 cup Quaker quick pearled barley


Tips

I served mine using lettuce leaves instead of tortillas with low fat mexican style cheese and a tablespoon of plain greek yogurt.


Directions

Put everything in the slow cooker and cook on high for about 4 hours. Remove the chicken after it's cook, shred with 2 forks, add back and mix well.

Serving Size: Makes about 7 1-cup servings
