Introduction

Ever have one of those days where you just NEED to eat something very filling, extremely juicy and full of flavor? I just did, so I indulged in a big way. To me, nothing is better than a plate full of veggies and sauce. Ever have one of those days where you just NEED to eat something very filling, extremely juicy and full of flavor? Ingredients

    1 Green Bell Pepper, large, chopped
    1 Tomato, medium, chopped
    1 Yellow onion, small-medium, chopped
    1tsp Garlic, minced
    2oz Mushrooms, sliced
    3oz Chicken breast strips (Tyson Grilled & Ready), chopped

    1/4c water, divided
    pinch salt
    cracked black pepper, to taste (generally the spicier you make it, the longer you'll feel full)
    Italian Seasoning, to taste

    Nonstick cooking spray if desired

Tips

The natural juices from these veggies make a great sauce (like, lick your plate good) and if you have room in your diet for the extra calories, this would be great served over rice.


Directions

Spray 8" skillet with nonstick spray - if desired

Add chicken and half the water, cook one minute over medium-high heat (to extract juices), remove from pan

Cook onion one minute (to absorb juices), add mushroom and garlic, cook three minutes, add bell pepper, tomato, water, salt, pepper and Italian seasoning, stir, cover and simmer on medium for three minutes, add chicken and stir, cover and simmer another two minutes or until veggies are desired firmness.

Serving Size: makes 1 very satisfying plate
