Number of Servings: 1

Ingredients

    1 medium head of cauliflower
    Juice of one lime
    2 medium ripe tomatoes
    ½ red onion, cut in half
    1 clove of garlic
    Half of a bunch of cilantro
    Salt to taste
    Fresh jalapeño pepper, as much as desired.
    I usually use half with seeds removed

Directions

Process all ingredients in a food processor. Ideally cauliflower should be chopped separately as well as tomatoes. Stir all ingredients together in a large bowl. Salt to taste. Add more lime juice to taste. Cover and refrigerate.

Serving Size: Makes 16 ¼ cup servings
