Ingredients

    Chicken Breast - about 2 pounds, cut into bit sized pieces
    Honey, 1/4 cup
    Sriracha Hot Sauce, 1/2 cup
    Shallots, 2 small or 1 large
    Juice from 1 lime
    Cilantro, a bunch, chopped
    Quinoa, cooked per package instructions.

Tips

If it's too spicy, use a little less sriracha and add hoisin sauce to the mix. You can also add a bit of sugar at the end.

You can also add chopped green onions to the finished chicken.


Directions

Using coconut oil, sweat shallots in a large skillet or pot. Add the chicken and brown. Mix the honey, lime juice and sriracha together. Add the mixture to the chicken. Simmer uncovered about 10 minutes or until the chicken is cooked through. You can also keep simmering until the sauce is a thicker consistency. Add chopped cilantro at the end along with any spices such as garlic salt and sweet curry powder for an extra kick.

Serve over a half cup of quinoa per serving.

Serving Size: Makes about 7 3/4 cup servings
