Introduction

Ingredients

    2 cans (13 oz.) Chunk Light Tuna in Water, drained
    1 Carrot, shredded or minced
    1/4 cups Seasoned Panko or Bread Crumbs
    2 Medium Eggs, beaten
    1/2 tbsp. Onion, finely diced or minced
    1/2 tbsp. Sweet Pickle Relish
    2 tbsp. Parsley, dried or finely minced fresh
    1 tsp. Garlic, minced
    2 tsp. Italian Seasoning
    1 tbsp. Light Mayonnaise (like Hellman's)
    1/4 tsp. Paprika
    1 tbsp. Brummel & Brown Spread with Yogurt, melted
    1/8 cup Cut Leaf Spinach, finely chopped (frozen and thawed or fresh)
    Cooking spray
    Light Hamburger Buns (Optional, not calculated)

Tips

Try topping your tuna patty sandwich with a little extra mayo, tomato, and lettuce, but don't forget to add your bun and condiments to your Nutrition Tracker!


Directions

1. Mix all ingredients together and form into four patties.

2. Spray a large skillet with cooking spray and heat to medium.

3. Saute tuna patties for four to five minutes on each side till browned. Turn them carefully, as they may fall apart easily.

4. Serve as an entree or on a bun as a sandwich.

Serving Size: Makes 4 1-serving patties.
