Ingredients

3 oz Cheddar Cheese
2 tbsp Butter, unsalted
1 cup, chopped Onions, raw
2 cup Tomatoes, red, ripe, canned, wedges in tomato juice
6 serving Nabisco Ritz Crackers (5 crackers)
0.50 tbsp Extra Virgin Olive Oil
4 tbsp Kraft Real Mayo
Directions
Saute the onions in olive oil on low heat until nearly clear
Pour canned tomatoes into the pan and top with chopped basil
Stew the tomatoes, onions, and basil on low until flavors meld and there is no more water or juice in the pan (needs to work as the pie filling)
In a pie pan, crush up the Ritz crackers.
Melt the butter and drizzle over the Ritz crackers.
Put the tomato/onion/basil filling into the cracker crust
Mix the cheddar with the mayonnaise and spread on top of the pie
Broil or bake the pie until the cheese melts and browns slightly
Serving Size: makes 8 servings
