    10 yukon gold potatoes
    2 tbs evoo
    1 C almond milk

    5 C vegetable broth
    1/2 C mushrooms
    1/3 C onion
    1 tsp evoo
    1/2 C flour
    1/3 C almond milk
    spices (thyme, oregano)


blend potatoes for smoothness
leave skin on or take off for smoother mix


clean and boil potatoes
while boiling, brown flour in a saucepan
remove flour to a separate bowl
brown onions in oil in saucepan
add vegetable broth and spices
add flour into milk and stir well
slowly incorporate flour mixture into saucepan
simmer until thick
add mushrooms and mix gravy
take out potatoes when ready
blend with oil and milk (or mash)
enjoy together!
