Introduction

My own take on my mother's Irish stew. My own take on my mother's Irish stew.
Number of Servings: 6

Ingredients

    1 lb Extra Lean Ground Beef (94% fat free or more)
    1 Vidalia Onion (medium or 1/2 large)
    2 tsps Minced Garlic (fresh or in water)
    2 Bay Leaves (remove after cooking)
    1/4 cup Worchestershire Sauce
    1 tsp McCormick Season-All Salt (more to taste)
    4-6 Russet Potatoes (more if small)
    1 cup Carrot Matchsticks or chopped carrots
    1 Tbsp Chipotle Tabasco Sauce (optional)
    Chicken Stock (2-4 cups) Enough to cover all ingredients
    Salt & Black Pepper to taste
    Corn Starch (for thickening)

Tips

Always use cold water with your corn starch slurry and add cold mix into hot stew. Potatoes cook best when cut into bite sized pieces, russet works best as it contributes potato starch to the stew to help thicken as well.


Directions

Brown ground beef, drain off fat, set aside. Saute onions and garlic in same pot until translucent. Add browned beef, worchestershire sauce, tabasco, and seasonings. Mix well. Add bay leaves, carrots, and diced potatoes. Cover all ingredients with chicken stock and bring to a boil. Simmer until potatoes are done (fork or knife test them). Mix equal parts corn starch with water to form a slurry. Add this to simmering stew to thicken to desired consistency. Adjust seasoning to taste and serve hot!
