Ingredients

    16 oz 85% lean ground turkey
    13.25 oz box whole wheat elbow macaroni, cooked
    1 small onion, chopped
    1-2 cups salsa (I used 2c.)
    1 packet taco seasoning
    4 oz neufchatel cheese
    1/2 cup plain low-fat greek yogurt
    1 cup 2% shredded cheddar cheese
    pepper & garlic powder, to taste
    chopped green onions, optional

Tips

I used 85% lean ground turkey, because that is what I had on hand. You could even cut more fat by using even leaner ground turkey or beef. I would also suggest that if sodium content is a concern to you, then use a low sodium taco seasoning packet, or make your own homemade taco seasoning.


Directions

Brown ground turkey & chopped onion in a large pan. Drain grease then return back to pan. Add salsa, taco seasoning, neufchatel cheese, greek yogurt, pepper, & garlic powder-mix until neufchatel cheese completely melts. Next, add cooked macaroni to meat mixture and mix well. Spread mixture into 13 x 9 casserole dish and top with shredded cheddar cheese. Bake in oven at 350 degrees x 20 minutes. Top with chopped green onions if desired.
