Ingredients

    1 cup quinoa
    1 avocado (cut into chunks)
    1 orange
    1.5 cup black beans
    1 ear of corn
    1 pomegranate
    2 tbsp. fresh cilantro
    1 lime

Directions

cook corn, let cool and cut off cob
cook quinoa
cut orange, pomegrnate and avocado
mix all ingredients
Add juice from orange and lime, salt and pepper
