Introduction

I created this recipe to use to add to mixed greens and other raw vegetables for a dinner salad plate. Number of Servings: 8

Ingredients

    450 grams/1 lb lentil cooked with
    1 large onion
    1 tsp Italian seasoning
    Cracked Pepper to taste
    3 cups cooked brown rice (added at the end)

Tips

I suggest making a large garden salad and topping it with this recipe. Add lemon juice or low fat/low sugar dressing to taste


Directions

cook lentils according to package directions adding onion and seasonings. Remove from stove and add cooked brown rice. Portion into servings and store in the freezer until needed.

Serving Size: makes 8 1 1/2 cup servings
