Ingredients

2 cups puffed rice cereal
2 Cups old fashioned oats
1/2 C vanilla protein powder (or additional oats)
1/4 C Stevia baking blend ( Or 1/2 C sweetener that measures like sugar)
1/4 tsp Salt
1/4 Cup Honey
1/2 Cup natural peanut butter
1/2 Cup unsweetened applesauce
1/4 Cup mini chocolate chips
Directions
Spray a 9X13 baking dish with nonstick cooking spray. Combine the puffed rice, oats, protein powder (or additional oats), sweetener, and salt in a large mixing bowl.
Microwave honey and peanut butter in a small bowl for 30 seconds, until peanut butter is melted and smooth.
Pour the peanut butter mixture over the puffed rice and oats, along with the applesauce. Stir until evenly combined (if cool enough to handle, it helps to use your hands) Stir in the chocolate chips. Press the mixture into the prepared pan. Gently press some of the chocolate chips into the top of the bars. Chill the bars in the refrigerator for at least 30 minutes or until firm. Cut into 16 bars. Store in the refrigerator for up to one week.
