Ingredients

    1 pound farfalle
    2 tbsp. olive oil
    1/2 pound turkey sausage, casing removed
    1 small onion, chopped
    1 (15-ounce) can navy beans
    2 tbsp. oregano
    1/2 cup mascarpone cheese
    1 tsp. salt
    1/2 tsp. pepper

Directions

Cook pasta as directed. Drain and reserve 1 cup of pasta water.
In large skillet, heat olive oil over med-hi heat. Add sausage and onions. Use wooden spoon to break up pieces. Continue cooking until sausage is cooked and onions are tender. Add beans and oregano; cook 2 minutes. Add pasta water, scrapping up brown bits. Add cheese and stir until it melts into a sauce. Add salt , pepper, and hot pasta. Stir until coated.
