Introduction

Great served over a bed of whole wheat spaghetti and sauce. Great served over a bed of whole wheat spaghetti and sauce.

Ingredients

    1 eggplant, peeled, cut into large cubes
    8 oz Portabella mushrooms, whole (rinsed)
    2 medium green bell peppers, cut into 1"-2" squares
    3 small onions, cut in quarters
    1 lb boneless, skinless chicken breast strips
    2 tsp Italian seasoning

Tips

Add squash, zucchini, red or yellow peppers, or whole cloves of garlic to make it truly your own.


Directions

Preheat bbq grill or set oven to 350.

Layer ingredients on skewers as desired.

Spray pan or grill top with non-stick cooking spray (if desired).

Grill or bake for 30 minutes.

Season shortly before serving.
