Introduction

Number of Servings: 12

Ingredients

    mix all dry ingredients in one bowl and then add grated lemon peel - set aside

    mix together all wet ingredients well.

    Add wet to dry, mix together with a spatula just until moist - do not over mix or they will not rise and be too dense

    place in greased muffin tins and place in oven

    Bake for 15-20 minutes - tops will be golden brown on top when done

    * If your not sure if they are done, test a muffin with a toothpick through the centre - it should come out clean*

    Remove from oven when done.

    Rest 5 minutes and remove from tins - serve warm or room temperature

Directions

pre-heat oven to 375 degrees Fahrenheit
grease 12 muffin cups
place batter in tin (about 1/3 cup)
