Ingredients

    1 (18.25oz.) box of yellow cake mix
    1 c. water
    1/3 c. unsweetened applesauce
    3 medium eggs
    1 (20oz.) can crushed pineapple, in natural juice
    1 (1oz.) box of sugar-free, fat-free vanilla pudding
    2 c. skim milk
    1 (8oz.) container of fat-free cool whip
    1 c. sweetened flaked coconut


Directions

1. preheat oven according to package directions for cake mix. Spray a 9X13 baking pan/dish with non-stick spray.

2. In a large bowl combine the cake mix, eggs, water, and applesauce with a mixer at medium speed for 3 minutes. Pour batter into pan and bake for 35-40 minutes.

3. remove cake from oven and poke several holes in it with a fork. Spread the can of crushed pineapple over the top of cake. Let cake cool.

4. Mix the pudding mix and milk together according to package directions. When the cake is cooled, pour the pudding over top of the pineapple. Spread the cool whip over top of pudding and sprinkle the coconut on top. Place in refrigerator and let chill for about an hour before serving.
