Introduction

Designed in response to the high cost of "food" bars for breakfast on-the-go, these muffins cost less than 15 cents per serving while delivering quality nutrition. Ingredients

    20 g instant nonfat powdered milk
    0.5 c water
    1 T sugar
    1 T ground flax seed
    0.25 t salt
    0.25 t baking soda
    1 large egg
    120 g old fashioned oatmeal
    spices to taste (for example cinnamon)

Directions

Mix powdered milk with the ground flax seed, salt, baking powder, and sugar. Add 0.5 c water and mix thoroughly. Whisk the egg and beat into milk mixture to combine. Mix in the oats. Spray a muffin tin lightly with cooking spray and divide the batter into 6 muffins. Bake at 400 degrees F for 18 minutes.

Serving Size: Makes 3 servings of 2 small muffins each.
