Introduction
One of my favorites to cook in the slow cooker because it is so easy and delicious, plus it doesn't require any additional cooking when I get home. A complete "one pot" meal! Ingredients

1 pound (16 oz.) extra lean (93/7) ground beef, browned
2 Tbsp Oscar Meyer Real Bacon Bits
1 cup frozen fajita vegetable blend (or equivalent amount of sliced onions, green peppers, and red peppers)
1 cup frozen yellow sweet corn
1 cup uncooked instant brown rice
1 can petite diced tomatoes (do not drain!)
1 small can (6 oz) mushrooms, pieces and stems
1 cup chicken broth
Tips
We like to eat ours with a few saltine crackers.
Sometimes we add a dollop of plain Greek yogurt (tastes like sour cream) or a little shredded Cheddar cheese to our bowls.
Directions
1. Line slow cooker with a plastic liner and spray with cooking spray. Add ground beef and season with your favorite spice blend (I use Mrs. Dash Original, plus a little salt, pepper, and garlic powder). Sprinkle bacon bits over beef.
2. Layer the remaining ingredients in this order: fajita veggies, corn, rice, mushrooms, and tomatoes. Pour broth over the top.
3. Cover and cook on LOW for 7-8 hours or on HIGH for 3-4 hours. Stir well before serving.
Serving Size: Makes 4 servings, roughly 1.5 cups each
