Ingredients

    Grilled Sweet Corn - 4 Ears
    Edamame, shelled, fresh - 2 Cups
    Cherry Tomatoes, halved, 1 Pint
    Lime Juice of 2 limes
    Extra Virgin Olive Oil, 6 tbsp
    Honey, 2 tbsp
    Garlic, 2 cloves, minced
    Avocados, 3
    Salt
    Pepper
    Cayenne Pepper

Tips

Reserve avocado until ready to serve.


Directions

Grill corn. Cut off kernels and add to large mixing bowl with edamame and cherry tomatoes.

Whisk together lime juice, olive oil, honey, garlic, salt, pepper and cayenne in a smaller bowl.

Pour over top of vegetables. Top with 1/2 an avocado per serving. Add additional salt on top, to taste.
