Ingredients

    4 tilapia fillets, cubed
    3 fresh limes, juiced
    3 cloves garlic
    5 Roma (plum) tomatoes
    1/2 red onion, diced
    21/2 tbsp. cilantro, chopped
    kisher salt
    black pepper


Directions

Soak the tilapia in 3/4 of the lime juice for 3 hours. Drain off the liquid and discard. Mix the fish with the garlic, tomatoes, onion, cilantro, and the remaining lime juice. Season with salt and pepper to taste.

Great over a salad or with whole wheat tortilla chips.

    Very Good
    I really like this, I made it with salmon chunks marinaded it in lemon, lime and garlic. Add a combo of 5 peppers to kick it up. A huge bunch of cilantro and your recipe. You actually can use pretty much any firm fish or seafood (quality) amazing I served it with homemade chips and a mango side dish - 3/18/11
