Ingredients

2 large portobello mushrooms, stems removed
1/2 med onion thinly sliced
2 shiitake mushrooms thinly sliced
1 clove garlic thinly sliced
1 tsp olive oil
30 g halloumi cheese in two slices, further dividen in 4 strips each
Tips
Use the mushroom stalks in the sauté . Substitute basic mushrooms for shiitake but if possible use the right cheese, nothing else is quite like halloumi as it stays intact when grilled.
Directions
Grill the back of the portobello mushroom while dry sautéing the other ingredients( except cheese. Add a smidge of oil if necessary.
Turn the mushrooms over, drizzle with a few mls of oil each and grill for a few minutes. Top with the sautéed vegetables and decorate with the cheese strips. Grill again until the cheese starts to change colour.
