Ingredients

4 packages of 1/3rd less fat cream cheese
3/4 c. Splenda + 4 Tbsp Splenda
2 Tbps. Almond Milk Unsweetened Vanilla
2 tsp. Vanilla + 4 tsp. Vanilla
3 cups berries (fresh or frozen) smashed
1 pint Egg Beaters
1 tsp. Cinnamon
64 slices if 45 cal Sara Lee Bread
Pam cooking spray
Reduced cal syrup
Powder Sugar (optional)
Tips
My family loves french toast with powder sugar. You can opt out of this.
Directions
Prep: Mix Cream Cheese, 3/4 c. Spenda, and 2 tsp. Vanilla in a large mixing bowl. Add the unsweetened Almond Milk and mix well. In another bowl mash the berries to a pulp. Take two slices of bread. On each piece spread 1 tbsp. of the cream cheese mixture. Top one piece with 1 1/2 tbsp. berry mash. Place second piece cream cheese side down on top like a sandwich and seal edges. Repeat with remaining slices. In another large bowl, mix the remaining Splenda with the Egg Beaters and Vanilla. On a large heated skillet, spray with Pam cooking spray and dredge each stuffed french toast into the egg mixture carefully and place on skillet. Let the toast brown for 4 min or so and flip carefully. Cook for another 4-5 min and place on a cookie sheet or other large serving platter. Serve warm with reduced cal. syrup.
