    1 Can Lite Coconut Milk
    4 Ripe Peaches cut into small chunks
    1 tsp Cinnamon
    1 Cup plain Greek Yogurt (could leave this out for dairy considerations)
    1/4 Cup Honey
    2 scoops Vanilla Whey powder


I use a Cuisinart ice cream make I bought refurbished off of an online sale site. I had to freeze a little more to get a hard scoop from the mixture, but overall, a nice taste and consistency.


Slice and chunk up peaches into saucepan and add honey. Cook until they start to break down. Use an immersion blender once they become softened to puree up the mixture. Add coconut milk and yogurt if you prefer (otherwise you can leave out for lactose intolerant). I decided to add yogurt for a little creaminess and consistency. Let cool for a little bit and add to your ice cream maker for the recommended time or until desired consistency.

Serving Size: Makes about 6 servings of 3/4 cup size
