Introduction

Mashed potatoes really don’t need to be made with milk or cream to be rich and creamy. I’m using reduced-sodium chicken broth instead! Ingredients

    1½ pounds Baby Dutch Yellow Potatoes, Yukon gold or red potatoes.

    ¾ cup reduced-sodium chicken broth

    2 cups onions, chopped

    Salt and pepper, to taste

    2 tablespoons Smart Balance Light, see healthy benefits

Tips

You can also use Baby Dutch Yellow Potatoes or red (new potatoes). If you desire a more creamy texture, add 2 tbsp of non-fat Greek yogurt.


Directions

1. Scrub potatoes and cut into even sized chunks.

2. Add potatoes to a pot and cover with water. Bring to a boil, cover and simmer for about 15-20 minutes until tender.

3. In the meantime, place onions on a microwave safe plate and cook in the microwave for about 4 minutes, until soft.

4. Add cooked onions and chicken broth to a blender and blend until smooth.

5. Drain potatoes into a colander and place drained potatoes back in the pot. Add the Smart Balance, pureed onions and broth and a little salt and pepper. Turn flame to medium and smash using a potato masher or the back of a fork. Mash potatoes until smooth and all the ingredients are heated.
