1 8-inch low fat graham cracker crust
8 oz. fat-free cream cheese, softened
2/3 cup powdered sugar
1/2 cup low-fat peanut butter
1/2 cup nonfat milk (skim)
1/2 teaspoon vanilla extract
8 oz. fat-free frozen whipped topping, thawed
Tips
The mixture mounds up slightly in the 8" pie crust, so if you can find the low-fat version in a 9" crust, I think it would fit better.
Directions
Using an electric mixer, blend the softened cream cheese and powdered sugar until smooth. Add the peanut butter, milk, and vanilla. Beat until smooth.
Fold in the whipped topping. Spread mixture in the pie crust and smooth the top. Freeze until firm. Remove from freezer and let stand 15 minutes prior to serving. Refreeze leftovers.
