Ingredients

    1tsp olive oil
    2.5 cups chopped cauliflower
    1 cup of sliced leeks
    1/2 cup of sliced yellow onion
    1.5oz chopped stick salami (or 4 slices of cooked bacon, crumbled)
    2 medium red potatoes
    8 large eggs
    1/2 cup shredded smoked Gruyere Cheese
    salt, pepper, & thyme to taste

Tips

Serve alongside crusty bread and a creamy cheese such as brie. Can be served at room temperature or reheated.


Directions

Preheat oven to 350 degrees.

Peel red potatoes & slice into 1/4" rounds. Steam on stove until tender (about 10 minutes).

Heat olive oil in pan and add leeks and onion. Cook for about 3 minutes, until tender. Add salami or bacon and cauliflower. Add 1/4 cup of water and cook for 10 minutes, stirring occasionally. After 10 minutes, drain out any water that has not cooked off.

In a large bowl, beat the 8 eggs. Add salt, pepper, & thyme to taste, then stir in the 1/2 cup of shredded Gruyere. Stir in the cauliflower mixture.

Spray a round pie plate with cooking spray and line the bottom of it with potato slices. Pour the egg and cauliflower mixture into the pie plate.

Cook uncovered in the oven until eggs have set - between 35-45 minutes.

Serving Size: Makes 6 large slices or 8 small slices.
