Introduction

I found a recipe for a side dish that I turned into a main dish by adding several other ingredients. I found a recipe for a side dish that I turned into a main dish by adding several other ingredients.

Ingredients

    2- medium sized chicken breasts (browned and then sauteed)

    1 large zucchini, diced
    1 - 16 oz bag of frozen corn
    2 cloves garlic
    1/2 c. grated parmesan cheese
    1 1/2 pkgs (approx 3 cups) of Uncle Ben's Ready Rice- Long Grain & Wild Rice
    several tablespoons olive oil (1-2 tbsp for sautéing chicken, garlic & veggies
    lime juice
    italian seasoning
    salt
    pepper
    dried basil
    dried thyme
    cayenne pepper

    ** Cotija cheese- add to your liking-- I added a very little bit when spooning out food.


Tips

Season to your liking- I am a taste as I go person, so double check your flavors :)


Directions

1. Dice up the fresh zucchini and set aside until corn is defrosted. 2. Defrost corn (if using frozen) and combine with fresh zucchini. 3. Brown chicken and then saute with a tablespoon of olive oil and spices. Season to your liking. Cut up chicken and seta aside to combine with ingredients later. 4. Add olive oil to pan and mince 2 cloves of garlic. Saute garlic just until it starts to become fragrant and then add corn and zucchini to the pan. Add seasonings to your liking. Let veggies cook until desired tenderness. 5. While veggies are cooking, microwave rice according to instructions. 6. Add rice & chicken to vegetables once cooked. 7. Add lime juice and parmesan cheese and combine thoroughly. 8. Add cotija cheese to your liking (I added a very little bit to enhance flavoring).
