Ingredients

2 eggs
6 egg whites
5 slices of whole wheat bread
1 cup milk
3/4 cup Romano cheese
2 cups fresh spinach
3 turkey sausage links, cut into cubes
Directions
spray baking dish with olive oil spray
cube bread and place in the bottom of the dish
sauté cubed sausage
slightly wilt spinach with sausage
layer the sausage and spinach on top of the bread
put shredded cheese on top of this
in a bowl, mix the eggs, milk and salt and pepper (light salt if using Romano cheese)
slowly pour egg mixture over the bread, sausage, spinach and cheese
Best if left in fridge overnight. Then take out 20min prior to cooking.
preheat oven to 375
bake for around 30-40 minutes until browned on the top
